Penicillium Used
                          to Make Brie Perhaps the most widely used of any genus of fungi is Penicillium.  We're all familiar with at least one of the uses.  But some may surprise you:

Penicillium bilaiae - A soil fungus used as a plant growth promoting microorganism.

Penicillium camemberti - Used in the production of Camembert and Brie cheeses.

Penicillium candida - Also used in the production of Brie and Camembert cheeses.  Not to be confused with Candida albicans, which causes candidiasis in humans.

Penicillium chrysogenum (syn. P. notatum) - Used to produce the antibiotic penicillin.

Penicillium glaucum - Used to make Gorgonzola cheese.

Penicillium roqueforti - Used to make Roquefort and Danish Blue cheese.
